Edamame and Green Pea Dip

Green Dip (Edamame and Sweet Pea Dip)

  1. Choose shelled (out of the pod) edamame. It’s sometimes labeled mukimame. Edamame – in or out of the pod – is an extremely kid-friendly vegetable.
  2. You’ll find shelled edamame most readily in the freezer case. You can also use fresh found in the produce department.
  3. Any favorite Italian dressing, whether full-fat or light reduced fat, works well in this dip.
  4. Add more Italian parsley and mint if you prefer a more pronounced, complex flavor.
  5. No fuss, no muss honey measuring – spray measuring spoons or cups with vegetable cooking spray before adding honey.
  6. Did you know? Indiana is the fourth-largest state for peppermint production.
  7. Edamame provides high-quality, plant-based soy protein, which may help support a healthy heart. Edamame, sometimes called green sweet soybeans, are also rich in soy phytonutrients called isoflavones that help support bone, brain and immune system health.
  8. Green peas are rich in soluble fiber, the fiber type that may help lower LDL, or bad cholesterol.
  9. Green peas also provide some protein to help fill you up.
  10. Surprise! Mint offers a smidgen of vitamins C and A.
