First cultivated more than 5,000 years ago, lima beans have quite an intriguing history. The bean’s popularity with the Aztec and Inca cultures is reflected in many different artifacts, and, of course, in the name of the bean itself – named after Lima, Peru. Enjoy these interesting facts about lima beans.

Generally, fresh lima beans are sold in their pods, and the pods should be dark green, plump and firm when you pick them out at the store or farmers market.
