For the New Year, skip the vague resolutions and ignore the hype, hysteria and relentless misinformation about food and nutrition. Pick potatoes. Feel good about serving potatoes. I’m talking about every type and color of potato besides sweet potatoes (you already know they’re nutrient-rich). All other potatoes – white, red, gold/yellow, blue/purple – are nutritional powerhouses as well. They’re a smart carbohydrate choice because they’re rich in dietary fiber, potassium, magnesium, vitamin C and numerous B vitamins for optimal health. Keep that skin on as often as possible, as it contains half of the fiber, but the majority of the other nutrients are found in the potato flesh itself. And yes, watch the amount of butter, sour cream and salt you add to any potato! Balance. Moderate.
