Garlic-Roasted Lamb Recipe: A Russell Family Favorite

Ingredients:

1 leg of lamb or rack of lamb
6-8 garlic cloves
Salt, pepper or a blend of herbs

Recipe instructions:

Preheat oven to 450 to 500 degrees. Make slits every 3 inches in a leg of lamb or a rack of lamb, and insert cloves of garlic. Rub lamb with olive oil, and season with salt and pepper, or rub with a blend of herbs. (The Russells use the American Lamb Board’s pre-made lamb rub, a mixture of dried rosemary, mint, mustard seed, salt and garlic, but any aromatic herb works well with lamb.)

Place lamb in a roasting pan and put in oven. Sear the meat until a crust forms on the outside. Reduce oven temperature to 300 degrees to complete the cooking. For medium rare (140 degree internal temperature), cook for approximately 20 minutes per pound or until the internal temperature reaches the desired degree of doneness.
