Thai Mixed Melon Salad

1. Watermelon may be grown in 96 countries worldwide, but Indiana happens to be the fifth largest state for watermelon production.
2. All melons – cantaloupe, honeydew and watermelon – taste better if left unrefrigerated before eating. Once they are cut, though, get them in the refrigerator and enjoy in three to five days.
3. A little sesame oil goes a long way, so don’t be heavy-handed when pouring.
4. Fish sauce is a staple ingredient in Asian cooking. Just a little is needed as it’s very strong. You’ll find little bottles of it in the ethnic/Asian cooking section in most supermarkets.
5. All melon varieties are rich in vitamin C and antioxidants. Cantaloupe and watermelon also are excellent sources of vitamin A.
6. Peanuts provide this refreshing salad with crunch, healthy fats and a little protein.
7. Even the cilantro is nutrient-rich with bone-building vitamin K.
