3 Simple Summer Salad Recipes

Here are three reasons why my make-and-take salads are the perfect solution to that summertime dilemma: “What should I take to the cookout/picnic/family reunion?!”

1. Dietitian-approved. These salads are filled with healthy ingredients (fruits, vegetables, grains) and great taste. Rich, creamy, cheesy, high-calorie salads are great, but it’s so fun to discover something new and unique at summer gatherings.

2. Simple preparation. These require hardly any cooking! Only the farro in the Farro Tabbouleh Salad and frozen tortellini in the Trio Tortellini Salad need cooking. And both of those are ready in minutes. The remainder of prep for all three salads, including the Thai Mixed Melon Salad, is just chopping, slicing, whisking and stirring.

3. Portable. There are no fussy, messy sauces or garnishes. No stirring in ingredients or heating up “when you get there.” Just make and take. Of course, you’ll need to pay attention to food safety and transport, and keeping the salads in a cooler with ice packs if you’re not going to eat them immediately. Remember that two-hour rule!
