A fresh shrimp for sale still has its head for a couple days. One that is frozen (or has been frozen) contains no head.

Why? If a shrimp is frozen with the head attached, it will stink and release toxins in the meat as it thaws, says Karlanea Brown, an Indiana shrimp farmer. She says that cooking fresh shrimp with the head on releases sweetness into the meat. While the head may be eaten, she chooses to cast it aside at dinner time.
