Homemade Pork Sausage Patties
- Crushing fennel seeds is easiest with a mortar and pestle, but you can use a rolling pin and plastic bag. Don’t skip the toasting step as it enhances the fennel flavor.
- Aleppo pepper can be found at specialty spice stores or online. Or substitute ½ teaspoon crushed red pepper and ¼ teaspoon ground ancho chili pepper.
- Customize your pork sausage with favorite spices and ingredients, such as a little apple. Simply mix in about 2/3 cup very finely diced apple along with spices.
- Purchased sausage patties are more convenient, but you can more easily control sodium when you make homemade sausage patties. Spices and herbs add no or minimal sodium.
- Look for plain, lean ground pork in the meat case (rather than mild or hot seasoned sausages).
