  1. The softer, whole dates found in the produce department are best for these scuffins. Simply cut out the pits, then dice finely. Dates are very sticky when cutting, so you’ll need to coat your knife with flour a few times.
  2. Scuffins are baked like muffins in a standard-cup muffin tin, but their ingredients are a little closer to scones with the higher fat/richness of butter and whole milk.
  3. No chopping or slicing needed when you use natural sliced almonds. They’re found in the grocery store right next to the slivered and whole almonds.
  4. Like all dried fruits, dates are rich in vitamins, minerals and phytonutrients to promote optimal health. In fact, dates contain 50 percent more potassium than bananas, and provide dietary fiber and 16 vitamins and minerals. A few dates are the perfect snack for satisfying a sweet-tooth craving!
  5. White whole-wheat flour is 100 percent whole wheat with a slightly lighter texture and color. Always store whole-wheat flour in the refrigerator due to its higher fat content.
