Curried Egg Salad With Raisins and Toasted Pecans

  1. Hard cooked or hard-boiled? The terms may be interchangeable, but try not to boil those eggs too long. Perfect hard-cooked eggs are achieved when eggs covered with an inch of water are brought to a boil, covered, removed from the heat and allowed to sit for 12 minutes.
  2. Substitute sour cream, regular plain yogurt or any mayonnaise for the Greek yogurt if desired.
  3. Adjust curry powder as you see fit. And while you’re at it, feel free to add a lot more raisins and pecans.
  4. Naan is readily found in deli departments at large supermarkets.
  5. Toast pecans for maximum flavor in a skillet on the stove, in the microwave or in the oven. It takes just a couple of minutes.
  6. Pecans, like all nuts, contain heart-healthy fats as well as protein and dozens of vitamins and minerals for optimal health.
  7. Raisins provide fiber, iron, B vitamins and potassium.
  8. Greek yogurt adds an additional protein boost to this already protein-rich egg salad.
