Dragon Noodles

Dragon Noodles with Eggs and Green Peas

  1. Udon noodles are easily found in Asian sections of large supermarkets.
  2. Avoid overheating the entire dish once the peas are added or you’ll end up with dingy green peas.
  3. Any favorite vegetable would work in this dish. Possibilities include mushrooms, carrots, broccoli and edamame.
  4. Green peas provide additional protein to this dish, plus they’re rich in soluble fiber to help promote lower cholesterol levels and heart health.
  5. Add plenty of green onions and cilantro for bone-building and heart-healthy nutrients.
