Apple Cranberry Coleslaw

Apple Cranberry Coleslaw

  • Using pre-shredded coleslaw save lots of prep time. Choose any variety – shredded green cabbage or the green and red cabbage with carrot version.
  • While red apples add the most color to the green cabbage coleslaw, any favorite apples – from Golden Delicious and Granny Smith – can be used.
  • Coleslaw dressing is typically found in screw-top jars either in the refrigerated produce section or the salad dressing aisle.
  • Cabbage is a low-calorie vegetable with only 25 calories in 1 cup, but it packs in the health-boosting nutrients, from vitamins C, K and B6 to natural phytonutrients to help reduce cancer risk.
  • Keep the skin on those apples for twice the fiber and 45 percent more polyphenols. All apples are rich in cholesterol-lowering soluble fiber, plus quercetin, a polyphenol that may help reduce risk of Alzheimer’s disease and lung and prostate cancers.
